Today I would like to share with you 2 fish recipes that will provide new mums with protein, good fat and calcium. Whitebait is fine and chewy whereas codfish is especially good when it is steamed, grilled or pan-fried.
1) Yummy Fried Egg Omelette With Whitebaits
Method : Rinse whitebait, drain and cut into pieces. Chop spring onion and shred ginger finely. Beat eggs and put in the whitebait, spring onion, shredded ginger, salt and water. Mix everything well.
Heat sesame oil in the wok. Pour the egg mixture, lower heat, stir and swirl pan. When the bottom is slightly brown, flip over and fry the other side until golden brown.
Remove from heat, cut into wedges and garnish with some cilantro. Serve hot with rice!
Ingredients : 200gm codfish, 1 stalks spring onion, 2cm ginger, 3 cloves of garlic, 3 tablespoon sesame oil, 1 tablespoon shaoxing wine, light soy sauce, pepper and salt for seasoning.
Method : Rinse codfish, season with some salt and pepper. Steam fish in wok until cook, around 15-20 mins. Use a knife to check for doneness. Chop garlic and shred ginger finely. Fry it with sesame oil until golden brown. Cut spring onion finely. Set aside. Once fish is cooked, pour fried garlic and ginger over fish. Pour enough light soy sauce and shaoxing wine on top of fish. Lastly, garnish with shredded spring onion. Serve hot with rice!
